Tres Leches

Tres Leches, or “three milks cake”, has always been my favorite type of cake. It is essentially a simple vanilla cake that is soaked in a sweet milk mixture and topped with merengue and fruit. Some recipes use standard cake frosting or whipped cream, but I have always preferred a merengue topping. As it is served cold, it really makes for a great spring- / summertime cake

Ingredients
Cake
3 eggs (beaten separately)
1/2 cup white sugar
1 tsp vanilla extract
1 1/2 tsp baking powder
1/4 cup milk
Sweet Milk Mixture
1 can evaporated milk
1 can condensed milk
1 can Media Crema / whole milk
Merengue Topping
3 egg whites
1/2 cup sugar + 1/2 cup water
Other toppings
Dulce de leche / caramel
Sliced strawberries
Times and Temps
Bake cake at 350°F for 20-25 minutes
Allow to cool at room temp for at least 1 hour
After pouring milk mixture over the cake, chill in fridge overnight
